15 Easy One-Pot Vegan Meals

I love cooking and experimenting in the kitchen but, to be completely honest, there are times I just don’t have time or feel like it. That’s where these 15 Easy Vegan One-Pot Meals make life so much easier.

All of the following meals are simple and need only one pot (or pan) for cooking. They can even be made in a slow cooker, which to me is even better.

You know what that means, right? Clean up and washing dishes are a breeze!

As always, these recipes are healthy, meatless, dairy-free, and oil-free. They range from hearty chili recipes to warm soups & stews, and even vegan sloppy Joe’s and burgers. There should be a little something for everyone!

One-Pot Vegan Meals

1. Hearty Barley Vegetable Soup

I love soup for so many reasons! Not only is it easy to make and super filling, but it reheats and freezes well too. This barley vegetable soup recipe is also super healthy and loaded with wholesome ingredients. It can be a one-pot recipe for the stovetop or even made in a slow cooker.

My sister–a former veggie-hater–came up with this delicious vegetable barley soup. She has obviously recovered from her veggie-hating days and is now a healthy, plant-based eater that is off all of her medications. Her story of recovery is included in the article.

2. Sweet Potato Vegan Soup with Beans

This simple and comforting soup is a one-pot (or crockpot) sweet potato white bean soup recipe, so clean up is a breeze. And it doesn’t hurt that it’s packed with fiber, protein, and antioxidants!

3. Vegan White Bean Chili

I make this vegan white bean chili with cannellini or northern white beans, but you really could use any bean type you prefer.

This recipe satisfies cravings for chili but cuts out all of the unhealthy ingredients found in many other chili recipes. Loaded with chunks of sweet potatoes, tender white beans, celery, onions, and spices, this dish will keep you full for hours.

4. Black Bean Burgers

This black bean burger vegan recipe gets some of the highest reviews on this website. People love that the patties are firm and can even be cooked on the grill without falling through.

Because traditional vegan black bean burgers don’t have eggs in them, many fall apart easily or just mush together when eaten in a bun. But, that won’t happen with these. It’s the rolled oats that help them hold together.

All of the ingredients can be completely prepped in one bowl. Since these burgers can be grilled, I consider them a one-dish recipe.

5. Vegetarian Barley Soup

I love a warm, hearty soup, and this vegetarian barley soup hits the spot for me! The longer you cook it, the creamier and richer tasting it becomes.

Though I made this on the stovetop, it would also be a great option to cook in a slow cooker. What an amazing aroma to come home to after a long day at work!

6. Yes-You-Can Black Bean Chili

No meat? No problem! This vegan black bean chili recipe has all the taste of hearty chili and can be ready to eat in 15 minutes or less. The convenience of a three-ingredient dish without any greasy pans to clean.

7. African Sweet Potato Peanut Stew

Vegan African Peanut Stew with sweet potatoes is one of my personal favorite recipes of all time! We make it regularly. The flavors are simply amazing, like a party in your mouth. If you only try one vegetable soup recipe, let this be the one.

Sometime back, I experimented with a new recipe for chili. It turned out amazing! A follower even won a cook-off with this delicious crockpot vegan chili recipe!

Even Grandma Edwards said she would’ve thought it had ground beef, and she asked me to leave a bowl of it for her dinner.

If it can fool Grandma Edwards, it officially passes the test!

9. Soy Curl Barbecue Sandwiches

Have you heard of soy curls? Everyone has been talking about them, and I assumed they would be highly processed, but I was wrong.

This vegan soy curls recipe has made a believer out of me. The fact that they can help me have dinner on the table in minutes doesn’t hurt either.

10. Curried Sweet Potato Soup

This simple curried sweet potato soup recipe can be prepared in about 20 minutes flat! It is adapted from the Physicians Committee for Responsible Medicine.

Made with red curry, sweet potatoes, chickpeas, baby spinach, onions, and spices, this recipe is warm and bursting with flavor.

11. Mexican Tortilla Soup

This very simple yet substantial warm soup combines whole-grain bulgur with assorted beans for a hearty main dish.

12. Lentil Sloppy Joe’s

Easy, filling, and inexpensive, these veggie sloppy joes are a quick meal that reheats well for lunch the next day or two.

Just recently, in one of my Food for Life classes, a new friend told me that she tried these Sloppy Joe’s and was surprised that she loved them. It reminded me that we love them at my house too.

13. Vegan Potato Soup

I believe my love of creamy potato soup developed in childhood. It’s deep-rooted comfort food for me. Even now, it doesn’t have to be cold outside. We eat the vegan potato soup recipe year-round.

Any variety of potatoes can be used to make this soup, but my favorite is red potatoes. There’s no need to peel them because a lot of the nutrients reside in the skins.

14. Portobello Mushroom Burgers

Thick, juicy, tender, and hearty, these are the ribeyes of veggie burgers! Grilled or baked in the oven, you can’t go wrong with a vegan Portobello Mushroom Burger.

Mushroom lovers enjoy the Portobello in stir-fries, casseroles, soups, and salads. Another hearty preparation style is to give them solo status on a whole grain bun as a meatless burger with traditional condiments like lettuce, pickles, and tomatoes.

15. Vegan Meat Balls

These vegan meatballs can be made with barbecue sauce and served as an appetizer or main dish. Or replace the barbecue sauce with marinara for a delicious dish of spaghetti and meatballs. Whichever way you decide to make them, they’re delicious!

Technically, you can mix all of the ingredients in one bowl but will need a baking sheet or crockpot to cook them. They are so easy to make, I decided to include them in this article, because if you use parchment paper on the baking sheet, there’s no washing required. That qualifies as a one-pot recipe in my book!
