Chili Mac with Elbows
This healthy Chili Mac Elbows pasta and bean dish makes a hearty meal the whole family will enjoy. Serve with a tossed green salad or corn on the cob for a simple and fast dinner.
  1. Cook macaroni according to package directions.
  2. I always use spelt, quinoa, or brown rice pastas that are egg-free. They are readily available in most grocery stores. Make sure not to overcook them, as they will become mushy.
  3. Drain well and set to the side.
  4. Dice onions, celery, and bell pepper.
  5. In a sauce pan, add vegetables and 3 Tbsp of water or veggie broth. Saute until they are slightly tender, approximately 5 minutes. Add more water or broth as necessary.
  6. Stir in all other ingredients (except macaroni). Mix well and allow to cook 5-7 minutes.
  7. Add cooked macaroni, stir, and cook 1 minute longer.
  8. Serve immediately with tossed green salad or corn on cob.
