I am so excited about the upcoming Plant-Based Cooking Summit,  October 9th-14th in North Carolina! This is my 11-minute interview about the event.

Speakers for this event include Dr. Collin Campbell, author of The China Study and Whole as well as Chef Del Sroufe, author of Forks Over Knives—The Cookbook.

This program will take place at the beautiful Rumbling Bald Resort in NC.

“Situated on the Northern shore of Lake Lure, NC is the Rumbling Bald Resort. Surrounded by lush mountain tops and sheer granite cliffs, this resort offers a variety of outdoor activities, including numerous hiking and biking trails, two championship golf courses, a variety of boating and water sports, tennis, pickle ball, volleyball and basketball courts. Furthermore, this resort has a wellness center, including a small indoor swimming pool, fitness center, sauna, spa and hot tub.

Just 30 miles from Asheville NC, Rumbling Bald Resort is in the foothills of the North Carolina Blue Ridge Mountains. Surrounded by towering cliffs and softly forested mountains, Lake Lure has been named by National Geographic Magazine as “one of the ten most beautiful man-made lakes in the world”. It’s not surprising that this lake has been a filming favorite for movies such as Dirty Dancing and The Last of the Mohicans. And to make it even more spectacular, the Plant-Based Cooking Summit will be held during the peak season, when the mountains come alive with bright red, yellow and orange leaves.”

  1. It is so nice to see and listen to you on this video. Your recipes are delightful and it is so true that “Forks over knives” was the most important movie that made us realize that going Plant based was the only way to go. We are so lucky to have so many scientists, doctors and cooks who can show us the way. Have a wonderful time at the event!

    1. Nancy, you are SO encouraging! Thank you! I hope you don’t mind me sharing this post on my EatPlant-Based facebook page. Maybe it can encourage others as well.

  2. I just wanted to thank you for your website and great recipes, video’s and information. I use this site a lot and never have told you how appreciative I am. I don’t think I have tried one recipe that my husband and i haven’t liked. Thank you –
Also, we currently live in Ecuador and can’t get many items some people use in recipes – it seems we can always find things you recommend 🙂
    Again, thank you
    Diane
