This Vegan Soba Noodles with seitan is a colorful vegetable stir fry that's a delight for the eyes as well as the taste buds! With red bell peppers, onions, and fresh mushrooms served over soba noodles, it's jam-packed with antioxidants.
Drain and rinse under cool water. Once cooked, drain the pasta and rinse it with cold water to stop the cooking process and help keep it from sticking together.
Sauté onion in a skillet with 3 Tbsp veggie broth until transparent. I like to caramelize mine. Add mushrooms and bell peppers. Only add more water if needed. Continue cooking for approximately 5 minutes on medium heat.
Add the seitan and stir it in with the vegetables well, allow them to continue cooking for 2-3 minutes. I have provided information on where to purchase seitan and how to make your own in the post above.
Place veggie broth or water and flour in a medium bowl with soy sauce, garlic, ginger, and pepper and whisk together well.
Pour over stir fry and cook uncovered until thickened. Serve stir fry over noodles.

Tips & Suggestions:Noodle substitute- Udon noodles can be used to replace soba noodles in a stir fry for their thicker, chewier texture and ability to absorb sauces. While soba noodles offer a nutty flavor, udon noodles provide a more substantial bite that holds up well in stir-fries and pairs nicely with hearty vegetables and robust sauces.Prevent sticking- To prevent soba noodles from sticking together, rinse them under cold water after cooking to remove excess starch.
