Enjoy this healthy take on one of your favorite breakfast foods, French Toast Vegan. Perfect for breakfast or brunch, this will leave your family smiling. Adapted from Dr. Neal Barnard's book, The Cancer Survivor's Guide.
Open the silken tofu package and drain any water. Since silken tofu isn't packed with much water, there is no need to press it.
Combine tofu, banana, plant milk, molasses, vanilla, and cinnamon in a blender and process until smooth.
Pour mixture into a shallow bowl and dip each slice of bread. Add each piece to a hot non-stick pan as soon as coated. The one I use is a Stone Earth Pan by Ozeri. It's the best I've ever used.
Brown each slice on both sides in the skillet. You will need to do this in several batches, depending on the size of your pan.
Remove from pan, sprinkle with a little more cinnamon, add fresh berries, drizzle with maple syrup, and serve.

Tips & Suggestions:I have included step-by-step photos and directions above to ensure your first attempt will be successful.Bread- you can use any type of bread, but whole grain or sturdy, thick slices work best as they hold up better during cooking and add extra nutrition. Make sure the bread is slightly stale for optimal soaking.Prevent sticking- To prevent sticking, use a non-stick skillet. The one I use is a Stone Earth Pan by Ozeri. Ensure your pan is preheated to medium heat before adding the soaked bread.Banana substitute- If you prefer not to use bananas, you can substitute with unsweetened applesauce.
