Cook your own pintos from scratch in your crockpot or InstantPot, or use canned beans that have been drained and rinsed. The recipe calls for pintos, but you can use other varieties of beans or a mixture.
Add all ingredients to a blender and blend until smooth and creamy. You could also leave it a little chunky if preferred.
Transfer the bean dip to a serving bowl and, if desired, garnish with diced bell peppers, green onions, and jalapeños. They add a pop of color and make the dip even more inviting.
Serve immediately or chill for a few hours

Here are a few simple ways to make it your own!
Try different beans. Pinto beans are my favorite because they're naturally creamy, but black beans, cannellini beans, navy beans, great northern beans, or kidney beans all work well too. Each variety adds its own unique flavor and texture.
Turn up the heat. Blend in a fresh jalapeño, chipotle pepper in adobo sauce, or an extra pinch of cayenne for a spicier dip.
Add sweet corn. Stir in a handful of corn kernels after blending for extra texture and a touch of sweetness.
Mix in diced tomatoes. Fold in diced tomatoes or your favorite pico de gallo just before serving for a fresh, colorful twist.
Fresh cilantro. Blend in a handful of cilantro or sprinkle some on top for a bright, fresh flavor.
Roasted garlic. Swap the garlic powder for roasted garlic if you'd like a sweeter, richer garlic flavor.
More veggies. Stir in extra diced green onions, red bell peppers, or even finely diced red onion for added crunch.
Make it creamy. Blend in half an avocado for an extra-rich, silky dip with healthy fats.
