Cook the soba noodles according to package directions. Cooking time is usually only about 5 minutes. Cook soba noodles just until tender but still slightly firm. Do not overcook, or they become mushy.
When tender, drain and rinse the noodles in cool water to stop the cooking process and help them to not stick together.
Mix seasoned rice vinegar, soy sauce, ginger, garlic, pepper, green onions, and cilantro in medium-sized bowl.
Pour over cooked noodles, toss to mix, and serve.

Tips & Suggestions:Cooking noodles- To cook soba noodles, bring a large pot of water to a boil, add the noodles, and cook according to the package instructions, usually for 4-5 minutes. Stir occasionally to prevent sticking.
