S'mores are a treat that you can enjoy anytime and anywhere, even indoors. No campfire is needed for these delicious chocolatey, gooey treats, and they can be ready in only 5-minutes.
Gather your ingredients and set the oven to broil.
Break each of the graham crackers in half (unless you’ve made your own oil-free homemade), and line a baking sheet with as many halves as you plan to have s’mores. Save the other half to top the s’mores with before serving.
Top each cracker half with a piece of chocolate and then place a marshmallow on top. Large marshmallows can be cut in half which helps with keeping them from rolling off as they fluff up.
Place on the middle rack of your oven and broil for about 1 minute until they turn golden brown. Warning: don’t leave them unattended and watch them the entire cooking time because they will brown very quickly.
Remove the s’mores from the oven and top with the other graham cracker halves. Press down to smush the fluffy marshmallow into the chocolatey sandwich.
Microwave Method:
Break each of the graham crackers in half (unless you’ve made your own oil-free homemade), and place them on a microwave-safe plate with as many halves as you plan to have s’mores. Save the other half to top the s’mores with before serving.
Top each cracker half with a piece of chocolate and place in the microwave for about 20-30 seconds to allow the chocolate to soften.
Next, place a marshmallow on top and cook for another 10 seconds or until the marshmallows puff up. Note: large marshmallows can be cut in half which helps with keeping them from rolling off as they fluff up.
Remove the s’mores from the microwave and smush the fluffy marshmallows down with the other graham cracker halves.

Tips & Variations:
Spread ideas- Add a little peanut butter to the crackers when assembling to cook for an even better treat. Other nut butters work well too and even caramel sauce.
Cracker options- Make your own homemade graham crackers to keep these completely oil-free. The Vegan 8 has some Almond Butter Cookies that would probably be great for making s’mores.
Marshmallows- I like to use Dandies Large Vegan Marshmallows. The large marshmallows can be cut in half which helps with keeping them from rolling off as they fluff up.
Storage- If you have leftovers, store them in an airtight container in the refrigerator for up to 2-3 days. It's better to make them fresh, but they can be stored if needed.
