The Cholesterol Truth No One Explains (Even If You Eat “Clean”)
Struggling with high cholesterol—even though you’re doing “everything right”? You’re not alone, and you’re not failing. The real fix may be easier than you think, and it has far less to do with willpower and far more to do with what’s actually on your plate. This article from Jarrod Roussel, PA & Anita Roussel, BSN, cuts through the confusion and offers hope for those struggling with high cholesterol.

You can buy all the “clean” foods, read every label, and still watch your cholesterol climb. We know, because we lived that story too — until we discovered what was hiding in plain sight.
For years, we were the family doing everything right.
- Free-range eggs
- Grass-fed beef
- “No hormone added” dairy
- Organic everything
- Clean ingredients, not shortcuts
And still…
We kept collecting diagnoses and symptoms like they were coupons. Joint pain. Fatigue. Brain fog. Extra pounds. And labs that kept creeping in the wrong direction, no matter how hard we tried.
If this feels familiar, you’re not imagining it. And you’re not failing.
Most people aren’t told the truth about what’s actually driving high cholesterol, or how to lower it in the realistic, enjoyable way that fits real life. That’s what changed everything for us. And it’s what changes everything for our clients too.
Let’s start with the part almost no one explains…
Cholesterol Isn’t the Villain-But What You’re Eating Might Be
The fact is, your body needs cholesterol. It uses it to build hormones, repair cells, and support your brain.
The real trouble starts when two things happen at the same time:
- You keep eating cholesterol from animal-based foods (meat, eggs, dairy… even the “clean” ones). Your body already makes the cholesterol it needs. Any cholesterol you eat is extra.
- You’re not getting enough fiber to carry excess cholesterol out of your system. No animal product contains a single gram of fiber. Not one gram of it. But whole plant foods? They’re packed with fiber. Why does this matter? Fiber binds to cholesterol and escorts it out.
Imagine this simple picture. Your cholesterol is like water in a bathtub. Animal products turn the faucet on.
Fiber pulls the drain open. When you stop adding cholesterol (close the faucet), and your body can finally flush out what’s been building up (open, free-flowing drain), your numbers start moving in the right direction. That’s why we so often see cholesterol improve naturally when our clients enjoy whole food plant-based, the sustainable, flavor-first way… instead of the deprivation way.
Why It Feels Like Cholesterol Is “Genetic” (Even When It’s Not)
Family history matters. But we often forget something very important:
We inherit more than DNA.
We inherit recipes, habits, and patterns.
So if everyone in your family has high cholesterol, it doesn’t mean you’re stuck. It means you’ve likely been taught to eat the same foods that quietly fuel inflammation and high cholesterol. So please, don’t feel powerless here.
What Whole Food Plant-Based Eating Actually Does to Your Cholesterol
When you learn how to swap your old favorite animal-based staples with whole plant foods you genuinely enjoy, your body begins working with you instead of against you.
Here’s what changes:
- You remove the cholesterol source entirely. Plants contain zero dietary cholesterol. Animal products are filled with it.
- You naturally increase fiber (only found in plants), which removes the cholesterol already stored in your body.
- You reduce inflammation, which helps heal the lining of your blood vessels so cholesterol has nothing to stick to. This is why people often feel better long before the labs catch up.
Inflammation drops. Energy climbs. And most importantly, they finally stop “falling off the wagon” when they find the way to enjoy the meals they’re eating just as much or even more than their old favorites. This is the path that lasts.
“But What Do I Eat Instead?”
This is where most people get stuck. Because removing foods is only half the solution.
Consider this: If you only remove the old sabotaging foods, are you going to love your new way of living? As we always say, “What gets you results must really be exciting and enjoyable for the results to stick.”
The real, lasting breakthrough happens when you upgrade your favorites, without losing flavor or joy.
Some favorites from our community:
Complete tofu scramble with our POP hollandaise sauce
As Jarrod always says, “You can’t just sprinkle some orange (turmeric) on your tofu and expect it to taste like eggs.”
It won’t. But add the silky, rich hollandaise that replicates egg yolk? This is the kind of strategy that can change everything and keep you on the plant-based wagon rather than falling off it.
The Happy Burger
This recipe was born the night I (Anita) came home from a disappointing restaurant meal, thinking, “I just want a healthy burger that actually tastes good.” Less than thirty minutes later, I was enjoying one in my own kitchen, and our family’s been smiling about burgers ever since. Your meals do not need to be boring or restrictive to give you lasting results. They just need to be upgraded, the whole food plant-based way that tastes incredible and actually loves your body back.

Delicious Plant Milk
If dairy milk is one of the things you’ve been unsure how to replace, here’s an easy, delicious win. We stopped buying cow’s milk years ago when we learned how simple it is to make the whole food, plant-based version that tastes amazing and actually supports our health. We reach for this one every week because it’s creamy, flavorful, budget-friendly, and works beautifully anywhere you’d normally use milk. If you want to try the exact one we use at home, you can grab the free recipe here.
Why It Matters So Much
If you’re anything like the men and women we serve, those who lead, build, teach, parent, and regularly pour into others, then you’ve likely felt this tension:
- Your calling feels big, but your energy doesn’t always match it.
- Your labs give you pause. You wonder whether your body will keep up with the future that’s been placed on your heart.
We understand that deeply. But your body is not a burden. It’s not something to fight with or fear. It’s the perfectly designed tool that allows you to show up fully for the people and assignments entrusted to you.
And when you fuel your body in the way that naturally lowers inflammation and brings cholesterol into alignment, your body can stop holding you back and happily start backing you up.
Your Next Step (Simple, Actionable, Doable Today)
At your next meal, ask yourself: “How might I upgrade this?”
Not:
- ✗ what can’t I have
- ✗ what should I avoid
- ✗ what do I need to deprive myself of
Just this:
What can I swap in that tastes incredible and supports my body at the same time?
- One upgrade at a time.
- One meal at a time.
- That’s how cholesterol changes… naturally, enjoyably, sustainably.
