  • Raw unsalted cashews– Only use raw cashews and not roasted or salted. Cooked cashews will darken the cream color and even change the flavor. Purchasing raw cashew pieces instead of whole cashews for sauces and creams will help save money.
  • Oat milk– Oat milk is my personal preference because it best mimics cow’s milk with its creamier thicker texture. It’s perfect for coffee and smoothies, but you could also use another nut milk.   • Agave- Agave nectar is a natural sweetener made from the sap of an agave plant.  The chief benefit of agave is that it has a low glycemic index compared to other common sweeteners. Agave is available at many grocers in the aisle with sugar and other sweeteners.
  • Extracts – Hazelnut, maple, and vanilla are flavorful extracts that perfectly complement coffee, hot chocolate, ice cream, and many other desserts and sauces. Some specialty grocers carry hazelnut and maple, or you can order online.

How to make cashew coffee creamer

STEP #1: Soak the cashews before blending. Don’t skip this part. To get the smooth silky consistency this is critical, even if you have a high-powered blender.

If you have a high-speed blender, put the cashews in a small bowl, cover them with boiling water, and let them sit for about 15 minutes. If you don’t have a high-speed blender, they will need to soak for at least two hours.

STEP #2: Drain the cashews and toss them into the blender with your other ingredients. I use my Vitamix 5200 high-speed blender on high to make this recipe and it’s done in about one minute. When using a standard blender, you’ll want to blend for 2-3 minutes or until you see the consistency is creamy and smooth.
