I love peach season! There’s just something about stopping by one of our local produce stands or the grocery store and bringing home a bag of sweet, juicy peaches. Recently, my niece came up with the most delicious way to enjoy them!
She created this healthy peach cobbler recipe, and my husband and I were more than happy to volunteer as taste testers. We actually got to try it TWICE as she made a few tweaks. It’s a tough job, but somebody has to do it! The good news is that frozen peaches work beautifully, too, so we don’t have to wait for peach season to enjoy it again!

How to Make Vegan Peach Cobbler
The recipe card at the bottom of the page has the full list of ingredients with measurements and instructions.

STEP #1: Prepare the peach filling. Wash and slice the fresh peaches, then place them in a nonstick, oven-safe skillet or pot. Add the vanilla extract, cinnamon, maple syrup, lemon juice, water, and cornstarch. Stir well to combine.

STEP #2: Cook the peaches. Cook over medium heat for approximately 25 minutes, stirring occasionally, until the peaches are soft and tender but not mushy. Cooking time will vary depending on their ripeness.

STEP #3: Make the batter. While the peaches cook, combine the whole wheat flour, oat flour, baking powder, salt, almond milk, vanilla extract, cinnamon, and maple syrup in a mixing bowl. Stir just until everything is combined and you have a smooth batter. Avoid overmixing.

STEP #4: Preheat the oven and check the filling. Preheat your oven to 400°F. Once the peaches are tender, the filling should have a thick, syrupy consistency but still be slightly runny. It will continue to thicken as it bakes. If the filling seems too thick, stir in up to ¼ cup of additional water.

STEP #5: Add the batter. Using a spoon or an ice cream scoop, drop spoonfuls of batter evenly over the warm peach filling. It’s perfectly fine to leave a few small gaps between the dollops for that classic, rustic cobbler appearance.

STEP #6: Sprinkle on the topping. Evenly sprinkle the brown sugar and oats over the batter for a little extra sweetness and texture.

STEP #7: Bake the cobbler. Transfer the oven-safe skillet or pot to the oven and bake at 400°F for 10 minutes. Reduce the temperature to 350°F and continue baking for another 5–10 minutes, or until the topping is cooked through and lightly golden. Insert a toothpick into the center of the batter; it should come out clean, without wet batter.

STEP #8: Cool and serve. Allow the cobbler to cool for about 15–20 minutes so the peach filling can thicken slightly. Serve warm on its own or with a scoop of your favorite dairy-free vanilla ice cream.

Why Use Whole Wheat and Oat Flour?
One of the things that makes this healthy vegan peach cobbler special is the combination of whole wheat flour and oat flour in the topping. Using both creates a wonderful balance of texture and flavor while adding the nutritional benefits of whole grains.
Whole wheat flour provides structure and a slightly nutty flavor, helping the cobbler topping hold together as it bakes. Oat flour, on the other hand, has a naturally mild sweetness and helps keep the topping soft and tender. Together, they create a delicious topping that isn’t too dense or crumbly.
Can you use just one type of flour? You can experiment, but the results may be different. Using only whole wheat flour could make the topping a little heavier, while using only oat flour may produce a more delicate, crumbly texture. For the best results, I recommend using the combination listed in the recipe.
How to Make Your Own Oat Flour
There’s no need to buy expensive oat flour when it’s so easy to make your own at home! All you need is old-fashioned rolled oats and a blender or food processor.
Simply add about ¾ cup of rolled oats to your blender and process for 30–60 seconds, or until they reach a fine, powdery, flour-like consistency. Stop and scrape down the sides if needed.
Measure out the ½ cup of oat flour needed for this vegan peach cobbler and store any leftovers in an airtight container for future recipes.
Tip: If you’re making a gluten-free version, be sure to use certified gluten-free oats.
Tips for the Best Vegan Peach Cobbler
Choose ripe, juicy peaches. Fresh, ripe peaches will give your cobbler the best natural sweetness and flavor. Look for peaches that are fragrant and give slightly when gently squeezed. You can also use frozen peaches, making this a delicious dessert to enjoy year-round! If using frozen peaches, keep in mind that they may release more liquid and need a little extra baking time.
Don’t skip the cornstarch. Peaches release quite a bit of juice as they bake, and cornstarch helps thicken those juices into a delicious, syrupy filling. Without it, your cobbler could turn out watery.
Avoid overmixing the batter. Stir the wet and dry ingredients together just until combined. Overmixing can make the whole wheat flour develop too much gluten, resulting in a tougher topping instead of the soft, tender texture we’re looking for.
Serve it warm for the best flavor. This peach cobbler is delicious on its own, but a scoop of dairy-free vanilla nice cream makes it extra special. The combination of warm peaches and cold, creamy ice cream is hard to beat!
Frequently Asked Questions
No, you don’t have to peel peaches before making cobbler! The skins soften as they bake, so leaving them on is an easy way to save time while adding a little extra fiber and nutrients. I personally like leaving the skins on, but if you prefer a smoother filling, you can certainly peel them first. Either way, your peach cobbler will be delicious!
Absolutely! Frozen peaches work great in this vegan peach cobbler, making it a delicious dessert you can enjoy all year long. You can use them straight from the freezer without thawing first, though they may release a little extra liquid as they bake. You may need to add a few extra minutes to the baking time to ensure the peaches are tender, the filling is bubbly, and the topping is fully cooked.
Yes! You can substitute all-purpose flour for the whole wheat flour in this vegan peach cobbler using a 1:1 ratio. All-purpose flour will give the cobbler topping a slightly lighter, softer texture and milder flavor. I prefer whole wheat flour for its added fiber and nutrients, but both options work well. Just be sure to keep the oat flour in the recipe for that delicious, tender texture!
Yes, you can try making this vegan peach cobbler gluten-free by replacing the whole wheat flour with a 1:1 gluten-free baking flour blend that contains xanthan gum. You’ll also want to make sure your oat flour is certified gluten-free. I haven’t personally tested this substitution, so I can’t guarantee the exact texture, but a gluten-free flour blend should give you better structure than using oat flour alone. The topping may turn out slightly different, but it should still be delicious!
Yes. You can bake this vegan peach cobbler a day ahead, let it cool, and store it covered in the refrigerator. When you’re ready to serve, simply reheat it in the oven at 350°F until warmed through. You can also prepare the peach filling ahead of time and refrigerate it separately, then mix the batter just before baking for the freshest, fluffiest topping.

- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/2 cup maple syrup
Topping:

Instructions
- Prepare the peach filling. Wash and slice the fresh peaches, then place them in a nonstick, oven-safe skillet or pot. Add the vanilla extract, cinnamon, maple syrup, lemon juice, water, and cornstarch. Stir well to combine.
- Cook the peaches. Cook over medium heat for approximately 25 minutes, stirring occasionally, until the peaches are soft and tender but not mushy. Cooking time will vary depending on their ripeness. Using frozen peaches? There's no need to thaw them first! Add them directly to the skillet and allow a little extra cooking time. Since frozen peaches release more liquid, start with less of the water and add more only if needed.
- Make the batter. While the peaches cook, combine the whole wheat flour, oat flour, baking powder, salt, almond milk, vanilla extract, cinnamon, and maple syrup in a mixing bowl. Stir just until everything is combined and you have a smooth batter. Avoid overmixing.Tip: Need oat flour? It's easy to make your own! I've included simple instructions to make your own using whole oats in the post above.
- Preheat the oven and check the filling. Preheat your oven to 400°F. Once the peaches are tender, the filling should have a thick, syrupy consistency but still be slightly runny. It will continue to thicken as it bakes. If the filling seems too thick, stir in up to ¼ cup of additional water.
- Add the batter. Using a spoon or cookie scoop, drop spoonfuls of batter evenly over the warm peach filling. It's perfectly fine to leave a few small gaps between the dollops for that classic, rustic cobbler appearance.
- Sprinkle on the topping. Evenly sprinkle the brown sugar and oats over the batter for a little extra sweetness and texture.
- Bake the cobbler.
- Cool and serve. Allow the cobbler to cool for about 15–20 minutes so the peach filling can thicken slightly. Serve warm on its own or with a scoop of your favorite dairy-free vanilla ice cream. Enjoy!

Notes
- Fresh or frozen peaches: You can use 5 large fresh peaches (approximately 5 cups sliced) or 5 cups of frozen sliced peaches. There’s no need to thaw frozen peaches first. They may take a little longer to cook and release more liquid.
- Adjust the water if using frozen peaches: Start with ½ cup of water instead of 1 cup, adding more only if needed. The filling should be thick and syrupy but still slightly runny before baking.
- Make your own oat flour: No need to buy a whole bag! Simply blend old-fashioned rolled oats into a fine flour. Detailed instructions are included in the post above. Measure the oat flour after blending.
- Flour substitutions: All-purpose flour can replace the whole wheat flour in a 1:1 ratio, though the topping will be slightly lighter. I haven’t tested a gluten-free version, but a 1:1 gluten-free baking flour and certified gluten-free oat flour may work.
- Don’t overmix the batter: Stir just until the ingredients are combined to keep the cobbler topping soft and tender.
- Let it rest: Allow the cobbler to cool for 15–20 minutes before serving. This gives the peach filling time to thicken.
- Serving suggestion: This cobbler is especially delicious served warm with a scoop of dairy-free vanilla ice cream!
- Storage and reheating: Store leftovers covered in the refrigerator for up to 4 days. Reheat individual servings in the microwave or warm the cobbler in a 350°F oven until heated through.
