Zucchini is one vegetable that doesn’t get enough attention in my opinion. It is great for making so many healthy Vegan Zucchini Recipes–everything from sweet to savory!
Zucchini can be eaten for breakfast, brunch, lunch, dinner, or snacks. It’s completely versatile and can be shredded into bread and muffins, sliced for hearty salads, and even breaded and baked to a crisp.
Vegan zucchini recipes that are good for you
In addition to being delicious in so many recipes, zucchini is loaded with fiber, vitamin C, and even has a hearty dose of protein.
This nutrient-dense vegetable is great to include in lots of recipes, and no one will even know the dish they are eating is actually good for them.
Tips & tricks
- With a handy gadget called a spiralizer, zucchini can be turned into gluten-free noodles for pasta and salads.
- If you like to grill, zucchini is a terrific addition to any veggie kabob along with mushrooms, yellow squash, onions, and even pineapple.
- Grated zucchini is perfect for adding to pancakes, bread, and muffins.
It’s inexpensive and readily available
A lot of gardens are blowing up with zucchini during the summertime, and farmers’ markets are loaded with bountiful supplies. However, even during the winter months, many grocery stores continue to have a great supply of zucchini for relatively cheap.
Here in the Carolinas, I can usually find zucchini all year around at my local Ingles and Walmart stores.
So, no matter what time of the year it is, it’s time to try some of these amazingly healthy vegan zucchini recipes that are all completely oil-free.
